Soil
Of the calcareous clay type with predominately white marl, favouring the production of white wines.

Surface Area
1.4 hectares.

Growing method
Ploughing in early Spring, then minimal usage of herbicide to control weeds.

Parasite control
Balanced approach viticulture in conjunction with the Wine Cooperative.

Grape variety
Chardonnay.

Harvesting
Hand picked, in total respect of the grapes.

Vinification and ageing
Grapes are picked into baskets and then delivered by tipper trailer.
Processing is by crusher/de-stemmer, with removal of damaged grapes.
Pressing is followed by settling. Alcoholic fermentation is in oak barrels, through to the end of malo-lactic fermentation, with racking and fining with bentonite and casein before bottling.
During all these operations the wine is tested by an authorised laboratory and an oenologist.

Wine characteristics
A very heady, almond bouquet. It is rich on the palate, very consistent, with great roundness touching on unctuousness.

Matching with food
As an aperitif and with fish.

Keeping potential
7 to 8 years.
